You already found out how to open an existing note. You may create a new note by selecting New from the File menu.
Just play around a bit with the text editing, with recording and play back (if possible), create notes, rename, close and re-open and delete them. You may also quit Tell-Me without closing any notes and restart it to see what happens. Now, imagine Tell-Me as a startup application and keep in mind that saving is also done automatically on shutdown!
And please: Even if you seem not to like Tell-Me, take a short look into the "About Tell-Me" file and read the first two paragraphs. I'm sure, Tell-Me IS the note-block for you.
